品種:100%卡本來蘇維翁(赤霞珠)。

 

土壤:選擇在土壤,植物和小氣候之間取得最佳平衡的地塊。通過優化營養管理和發芽控制產量。 Versant卡本來蘇維翁葡萄酒位於Ensérune(朗格多克 - 魯西榮)附近朝南的陽光充足的山丘上。土壤由石灰石礫石組成,有助於雨水滲透並賦予更多成熟的香氣和單寧。

 

釀造:不銹鋼溫控大桶讓酒精發酵。長期浸泡3至4星期,每天攪拌兩次。乳酸發酵。

 

陳釀化:存放於不銹鋼罐中8個月。

 

品嚐注意事項:深石榴石的顏色。濃郁的紅色水果,香料和甘草的香氣。口感慷慨,帶有一些成熟的草莓,甜椒和桉樹。

 

搭配:烤牛肋骨或鴨胸,gardianne de taureau(富本地特色的燉牛肉),osso bucco,橙子鴨。在室溫下17-18°C。

A collection of 8 fine varietal wines of outstanding quality. Made with grapes from a selection of vines on the Languedoc hillsides offering the best orientation, each varietal proudly shows off its character in a nicely-balanced and elegant style. Thanks to its broad aromatic range, this versatile range offers wines that will delight all wine-lovers and adapt to every consumption moment.

 

VARIETIES : 100 % Cabernet Sauvignon.

 

SOILS : Plots with the best balance between soil, plant and microclimate are selected. Control of yields via optimal management of nutrition and de-budding. The Versant Cabernet-Sauvignon vines are situated on the sunny south-facing hills near Ensérune (Languedoc-Roussillon). The soil is made up of limestone gravel which helps rainwater to penetrate well and gives more mature aromas and tannins.

 

WINEMAKING : Alcoholic fermentation in stainless steel, temperature controlled vats. Long maceration of 3 to 4 weeks with twice daily pumping over. Malolactic fermentation.

 

AGEING : 8 months in stainless steel.

 

TASTING NOTES : Deep garnet color. Powerful aromas of red fruits, spices and licorice. Generous on the palate with hints of ripe strawberries, sweet peppers and eucalyptus.

 

PAIRING : Grilled beef rib or duck breast, gardianne de taureau (local beef stew), osso bucco, duck à l'orange. Serve at room temperature 17-18°C.

 

Cellaring potential : 6 years.
